Stonebeck Cheese is a unique product celebrating elements of landscape, cultural heritage, sustainability, conservation and biodiversity. Their vision is to revive an arguably extinct British Territorial cheese in a sustainable way.
Ingredients:
- Raw milk from Stonebeck herd. Being unpasturised, the milk retains its own character - reflecting the cow breed, environment, diet and the native microflora unique to Low Riggs Farm: the terroir.
- Traditional starter culture is a mix of lactic acid-producing bacteria that promote acid development in the cheese. They only add small amounts to augment the flora naturally present in our raw milk.
- Rennet sets the milk, creating curds and whey, the solids and liquid respectively.
- Pure salt
